Cuvée from from old vines of Chambert's Malbec, produced in organic and biodynamic. delicate grappes fermeted with wild yeast and aged 18 months to obtain a complex, fresh cuvée with a very fine bubble.
Varieties: 100 % Malbec
Vineyards: From the Kimmeridgian limestone, the same limestone in Champagne and Burgundy. Old vids in organic and biodynamic agriculture. Early harvest to keep the freshness.
Wine making: First fermentation with native yeast. The wine went through its second fermentation (to produce the bubbles) in the bottle in which it is sold. Champagne is the most famous wine to use the traditional method. Ageing on lath of 18 months. Consultant wine maker : Stephane Derenoncourt.

Tasting suggestion: Using 100% biodynamically grapes from our vineyard, this sparking wine is made with Traditional Method (as Champagne)! We are very proud of the outcome and already has become the choice of many Sommeliers from gastronomic restaurants. It is a wine full of brilliant fruitiness, yet retains its originality of being a 100% Malbec from Cahors, with some subtle violet floral note. It can be served as aperitif, going with or without food, or match with some fruit-based dessert as long as it is not too sweet.
